Ingredients
  

  • – 1 cup dried green or brown lentils rinsed and drained
  • – 2 cups water
  • – 1/4 cup olive oil
  • – 1/2 cup chopped red onion
  • – 1/2 cup chopped cucumber
  • – 1/2 cup cherry tomatoes halved
  • – 1/4 cup crumbled feta cheese
  • – 1/4 cup grated Parmesan cheese
  • – 1/4 cup chopped fresh parsley
  • – 2 tablespoons lemon juice
  • – Salt and pepper to taste
  • – 1/2 cup fried cheese croutons see instructions below

Instructions
 

  • In a large bowl, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  • Drain lentils and let cool.
  • In a large bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Add chopped red onion, cucumber, cherry tomatoes, feta cheese, Parmesan cheese, and parsley to the bowl. Stir to combine.
  • Add cooked lentils to the bowl and stir to combine.
  • To make fried cheese croutons, heat 1/2 inch of olive oil in a frying pan over medium heat. Cut 1/2 cup of feta cheese into small cubes. Fry cheese cubes until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
  • Add fried cheese croutons to the salad and stir to combine.

Notes

– Use any type of cheese you like for the fried cheese croutons.
– Add some heat to the salad by incorporating diced jalapeños or red pepper flakes.
– Make the salad ahead of time and refrigerate for up to 24 hours.
